I haven't seen nearly the amount of AWA as I have most of the old territories, but these stick out based on what I have seen:

Rockers vs Rose & Somers - both the bloodbath and the cage match

Hennig vs Bockwinkel - the match where Hennig wins the AWA title. I've never seen the New Years Eve classic between them, but I sure would like to.

Badd Company vs RPM's - a random tag bout from 88' that I thoroughly enjoyed

Lawler vs Kerry at Superclash 3

There was actually a pretty decent match  with David Sammartino challenging Stan Hansen for the AWA Title on ESPN Classic the other night.  Well at least I thought it was good Could be 1. There was actually a clean finish in an ESPN main event...or 2.  I am a HUGE Stan Hansen mark.  Ehh Probably both.

The only thing I dislike about the AWA shows is that during squash matches, why do the jobbers get in so much offense?  I mean, sometimes the matches seem way too competitve. When at any time should a star beat a jobber with a rollup/insdie cradle maneuver?

I'm like Shannon, as I didn't really get caught up in to the AWA until 1986 or so, so I'm on the bandwagon of the Rockers vs. Rose/Summers and Hennig vs. Bockwinkel

However one incident that still sticks in my mind is a TV match with Snuka where he was on the top rope ready to make the leap and Col. DeBeers runs in and pushes him off and Snuka lands face first on the floor, to which DeBeers follows up with a forward/reverse piledriver.  I remember blood being splattered all over the floor and thinking Snuka was dead.

Then again there is the time when Madusa made her debut and was wearing this hot little lace number and Ron Trongard was commentating and acted like a 9 year old looking at a Playboy for the first time.

The Road Warriors vs Curt Hennig and Baron Von Raschke.  Animal ducked and Hennig got tied up by the neck between the top and middle rope.  Hennig bled like until it looked like someone had slaughtered some livestock out there.

I am holding out hope for the one hour draw match to be on the WWE Hennig DVD coming out soon. I can't seem to find a good copy of it anywhere.
